Passatelli with crispy spinach fondue and cayenne pepper

Ingredients

  • 500 gr. of passatelli CE.MA

  • 200 gr. of crescenza (or stracchino)

  • 100 ml of fresh cream

  • 100 gr fresh leaf spinach

  • a knob of butter

  • a grind of chilli

Preparation

In a pan, melt the butter, add the spinach and leave to dry slightly. Add the chilli together with the fresh cream and the crescenza / stracchino. In abundant salted water, cook the passatelli for at least 5 minutes, and add them to the sauce. Mix gently and serve very hot.
