Passatelliwith crispy spinach fondue and cayenne pepper

Ingredients

500 gr. of passatelli CE.MA

200 gr. of crescenza (or stracchino)

100 ml of fresh cream

100 gr fresh leaf spinach
-
a knob of butter
-
a grind of chilli
Preparation
In a pan, melt the butter, add the spinach and leave to dry slightly. Add the chilli together with the fresh cream and the crescenza / stracchino. In abundant salted water, cook the passatelli for at least 5 minutes, and add them to the sauce. Mix gently and serve very hot.
